Mushroom & Leek Quiche (GF)
Mushroom & Leek gluten-free quiche with savoury herbs, perfect for a weekly nourishing lunch or dinner. Serve with a side salad of roast veggies.
I am a solid believer that a warm and moreish quiche should be a staple in everyone’s recipe rotation. There is something deeply comforting about a savoury quiche—warm, nourishing and endlessly versatile. This Mushroom & Leek Quiche is a gluten-free, nutrient-dense take on a classic, made with simple whole-food ingredients that support gut health, energy and overall nourishment.
Each ingredient in this quiche has been chosen with intention, offering both flavour and functional benefits:
Nutritional yeast adds a naturally cheesy flavour while delivering B vitamins, including B12 (when fortified), which is essential for nervous system health, energy production and cognitive function. It is also a valuable plant-based protein source.
Almond meal provides a satisfying, gluten-free base rich in protein, healthy fats, and fibre, helping to stabilise blood sugar levels and support digestive health.
Mushrooms are a powerful addition, containing beta-glucans that support immune function, along with ergothioneine, a unique antioxidant linked to cellular protection and longevity.
Leeks offer gentle prebiotic support through their inulin content, helping to nourish beneficial gut bacteria and promote digestive balance.
Ingredients (for the filling)
½ of one large leek
4-5 white button mushrooms
6 eggs
2 garlic cloves, minced
½ cup non-dairy or dairy milk
¼ cup of nutritional yeast
1 tsp thyme
salt and pepper
Ingredients (for the crust)
2 cups of almond flour/meal
¼ tsp salt
2 tbsp soft non-dairy or dairy butter
2 flax eggs (2tbsp ground flax + 4tbsp water)
Method
Preheat oven to 180ºC/375ºF. Grease a 9” pie dish and set aside for later.
Heat olive oil in a large pan. Add in leeks and mushrooms and sauté until softened. Remove from heat and cool for 5 minutes.
While the veggies are cooling, add the crust ingredients to a food processor. Process until dough starts to come together lightly. You know it is ready when you are able to squeeze it together and it holds.
Press the crust ingredients into the pie dish with your fingers or a spoon until it evenly coats the bottom and sides of the dish.
In a large mixing bowl, mix eggs, milk, nutritional yeast, salt, pepper, thyme and garlic. Lightly fold in the cooled veggies.
Poor the filling into the crust. Place dish on the centre rack of the oven and cook for 30 minutes.
Remove from oven and allow to cool for 5minutes. Slice and serve!
Serving suggestions
Serve warm with a simple leafy rocket or spinach salad dressed in olive oil and lemon, or enjoy cold as part of a nourishing packed lunch. This quiche stores well in the fridge for up to three days, making it a practical option for meal prep.

Now my recipes would not be complete unless the specific fibre benefits were spoken about. I am a huge Pro-Fibre practitioner and for good reason. It is one of the most well-researched macronutritients in the world, and the health benefits are dose-dependent. This means the more you eat, the more benefits you receive! Our bodies are comprised of more microbes than it is actual cells of our bodies. This means that the health of the microbiomes that these microbes live in is more essential than ever. And optimising your fibre intake is one super simple way to do that. This quiche contains unique fibres such as beta-glucans from mushrooms and inulin from leek. Both these fibres have been shown to increase production of SCFAs such as butyrate, bolstering the gut microbiome and beyond.
