Baked Zucchini and Carrot Fritters (GF)

Ingredients

  • 2 medium zucchinis

  • 2 medium carrots

  • 1 cup frozen edmame

  • 1 and 1/2 cups chickpea flour

  • 1/4 cup nutritional yeast

  • 2 tbsp flaxseed meal

  • 1 tbsp olive oil

  • 1 tbsp thyme

  • 1 tbsp oregano

  • 1 tsp onion powder

  • 1 tsp baking powder

  • 1/2 tsp salt

Method

  1. Preheat oven to 180degrees Celsius and line your baking tray.

  2. Soak frozen edamame in boiled water for 10minutes to thaw.

  3. Using a food processor or hand grater, grate the zucchinis and carrots and then add to a bowl.

  4. Add edamame, chickpea flour, nutritional yeast, flaxseed meal, olive oil, thyme, oregano, onion powder, baking powder, and salt. Mix well until everything is evenly combined and the mixture holds together.

  5. Using wet hands, shape into fritters and place on a lined baking tray. Bake for 15minutes, carefully flip each one and cook for an additional 5 minutes until golden-brown on all sides.

  6. Enjoy warm, on their own or with your favourite dip.
