Simple Lemon Tahini Dressing

This dressing is such a flavoursome staple in my kitchen as it goes with everything! On top of roast vegges, over some salad or avocado toast; this dressing has you set. Filled with healthy fats and nutrients to sustain your energy for longer, I love this dressing to meet my daily plant-based calcium requirements.

Garlic (Allium sativa) 🧄 the timeless culinary treasure is also a traditional herbal hero. It is a natural immune booster, considered the “russian penicillin” when eaten raw, packed with antioxidants that fight inflammation. Garlic can also help lower cholesterol and blood pressure, promoting a healthy heart.

Nutritional Yeast Flakes, not to be confused with baker’s yeast, is a miracle cheesy superfood. 💛 They're a complete protein, containing all nine essential amino acids. Nutritional yeast is also a rich source of B vitamins, crucial for energy production and nerve function. Plus, it's a fantastic source of trace minerals like selenium, which supports a healthy thyroid and immune system. Nutritional yeast flakes are known for their unique cheesy umami flavour but without the dairy!

The king of culinary oils and the ultimate kitchen staple, Olive oil 🫒is loaded with heart-healthy monounsaturated fats and antioxidants that protect your cells from damage. It can also help reduce inflammation and lower the risk of chronic diseases.

Tahini, a paste made from ground sesame seeds, provides a rich & nutty flavour to this creamy delight. Tahini is a nutritional powerhouse, packed with protein, healthy fats and fiber. It's also a great source of calcium, essential for strong bones and teeth 🦷. Tahini's antioxidants and minerals contribute to a healthy heart and a robust immune system.

Ingredients:

  • 1-2 cloves of garlic

  • 1/4 cup tahini

  • 1/2 cup lemon juice

  • 2-4 tablespoons of nutritional yeast flakes

  • 1/2 cup of olive oil

  • 1/2 tsp salt

  • fresh pepper to taste

Directions:

  1. Add all ingredients to a food processor or blender. Blend until smooth.

  2. Serve over a delicious rocket salad or store in an airtight container in the fridge.
